Abuela’s Mango Bread Recipe
2 Fresh Mangos, diced and smashed
2 Cups Wheat Flour or All-Purpose Flour
2 Tsp Baking Powder
1 Tsp Baking Soda
⅔ Cups Apple Sauce or 2 Eggs
¾ Cups Vegetable Oil
1 Tsp Vanilla
1 Tsp Cinnamon
Preheat the oven to 350 F.
Whisk together the dry ingredients, such as the flour, baking powder, baking soda, and cinnamon into a large mixing bowl.
Then add your wet ingredients, such as apple sauce, vegetable oil, and vanilla.
Once the ingredients are mixed together, add your fresh mangos.
You may notice that the mixture may have a dry texture before adding the mangos, but the mangos will give the bread the necessary moisture to form a batter.
In a greased loaf pan or dish pour the Mango bread batter into the dish and bake for 45 minutes to 1 hour. The baking time may vary based on different ovens.
